 2-3 hard cooked eggs, sliced
 4 strips of bacon, crisp
 1 small red onion, sliced
 3-4 Tbsp bacon drippings
 3 tbsp red wine vinegar or balsamic vinegar
 1 tsp brown sugar
 1 tsp dijon mustard
 salt and pepper
 1-2 tbsp olive oil
 8 oz baby spinach, stems removed

In a small pan whisk bacon drippings, olive oil, vinegar, brown sugar, and mustard. Allow to simmer one minute.
Place spinach and onion in a large bowl. Pour warm dressing over spinach; toss to coat. Arrange egg slices and sprinkle crumbled bacon on top. Season with black pepper.(Spinach will be wilted.)
Serve immediately.
Optional additions; thinly sliced avocados, chicken pieces, sautéed mushrooms, or feta cheese.
