I took this recipe from a regular banana bread recipe I've made before and swapped out the regular flour for buckwheat and the butter for olive oil and I liked it sooo much better. Ive also used the vegetable oil sugar coating on cakes before because I read somewhere that its the best way to get a crunch sugar coating so I wouldn't substitute the vegetable oil for any other type of fat I don't think it will get quite as crispy. the top of this banana bread is like a crunchy candy coating and the sliced almonds add a perfect amount of crunch without overpowering it like some other nuts in banana bread sometimes dol.
mash bananas and mix all the wet ingredients, then mix the flour, baking soda and salt together seperately and then mix everything together.
coat the pan with vegetable oil and sugar and then pour the batter into the pan and bake at 350 for 1 hour.
take out of the oven and set oven on broil and take a brush and coat the top of the banana bread with vegetable oil and sprinkle sugar on top heavily and once the oven is very hot put in back in until the sugar on top is turning brown and bubbling, maybe around 2 minutes ish.
