The recipe calls for just plain peanut butter fudge but I like to add chopped peanuts and mini chocolate chips on top.
Butter a 7x9" pan
Combine all ingredients except vanilla over the top of a double boiler, beating with whisk or wooden spoon until smooth. Remove from heat, beat in vanilla. Quickly pour into pan and sprinkle with chopped peanuts and mini chocolate chips(optional) - if you add the peanuts and chocolate chips slightly press them into the fudge so they won't fall off as the fudge cools. Cool before cutting into small squares. Refrigerate.
