My favorite Italian dressing, great with a spring lettuce mix with red and yellow cherry tomatoes and homemade garlic croutons. Or a fresh panzanella with basil, mozzarella pearls, heirloom tomatoes. I like my vinaigrettes pretty strong so add a few tablespoons less white vinegar if you like a more mild dressing but once it on the salad its not as overpowering as you'd expect.

Yields1 Serving
  cup high quality strong flavored olive oilI use Moini Granfruittato
  cup white vinegarplus or minus 1 tbsp
 1 pinch fresh cracked black pepper
 1 pinch red pepper flakes
 1 tsp lemon juice
 1 ½ tsp maple syrup
 1 tbsp finely chopped basil leaves
 1 tsp balsamic vinegar
 3 garlic cloves crushed into a paste
 1 tsp dried basilpreferably Grazianos
 1 tsp dried oreganopreferably Graziano
 2 tbsp water
 1 tbsp seeds and juice of cherry tomatoes about 5 ( strained to remove seeds )
 1 packet of Italian salad dressing mix zesty or other brand
 1 tbsp fresh grated Parmesan

Seeds of tomatoes are optional but it adds a nice Umami to the flavor. More maple syrup will mild out the the vinegar if its too intense. The longer it sits the better the herbs will infuse the oil so if you can make it a day ahead, do.
