 1 egg
 ¾ cup coconut milk
 ¼ cup honey
 2 cups whole wheat flour
 3 tsp baking powder
 ½ tsp salt
 1 cup fresh blueberriesFrozen are also great but the juice will make the color will bleed.

Preheat oven to 400 degrees F.

Melt coconut oil and cool to mix easier.
In a bowl combine egg, coconut milk, coconut oil and honey, then add coconut oil after it has cooled somewhat. In a separate bowl combine whole wheat flour, baking powder and salt. Add dry ingredients to the wet ingredients and only mix enough to combine. Do not mix batter excessively. Fold in fresh blueberries.

Bake at 400 degrees for 18-20 minutes.
